“I’m an Englishman in New York”…

No, not the truly execrable Gordon Matthew Thomas Sumner, CBE, purveyor of perverted pablum pop pap, but instead, another ex-Brit, Nick Solares of Eater magazine, a similar long-time resident of NY but in this show, back over here in his native land, singing the praises of Fergus Henderson, whilst dining on the delights that St John produces and that I’ve so often raved about in the past.

He gets to watch being prepared and then eat, lucky man, some of the garden of delights on offer inc. lamb sweetbreads with peas, ox-heart with beets and horseradish, and the restaurant’s signature dish, roasted bone marrow salad. My mouth waters every time I see the latter…

It’s only 7 minutes long but it gives a great flavour of just how genius is the work that Fergus — and his team — pioneered and continue to carry on and why, rightly, he is so idolised by some of the best chefs in the world…

Nick’s own channel on YouTube, called “The Meat Show” is well worth some of your time — none of the videos are more than 10 minutes long — fanatical as he is about the whole subject of meat. I’m sorry it’s on YouTube of course, so if you don’t want to give Google any more of your data points, you can catch it on the Eater website instead.
