Mum’s chip butty

I swore I wasn’t going to invoke Proust but as I was constructing a snack for lunch, I had just such a moment. A soft cottage roll, cut in half, both sides slathered with butter, then a layer of English mustard, laid in between are a few scraps taken off the ham from the fridge, all sprinkled generously with salt and pepper.

And then the crowning memory. The remnants of last nights’ steamed white potatoes, cut into roughly chip shaped sizes then cooked to a crisp golden-brown in a small amount of lard in a pan. As I bit into the chips, I was 100% tasting the very same ones as I used to eat at my Mum’s table as a kid. Completely and totally the exact same flavour. Close my eyes and I’m back there.

  1. Mmmmm! Only one thing to equal …… a fish finger sandwich with tartar and sliced dill cucumber. ( known as wallys where I come from) 😋
